Tomato Baked Eggs



Preheat oven at 300° C for 15 minutes.

Chop tomatoes. Add 1 tsp virgin olive oil, half a teaspoon salt, freshly grounded black pepper, oregano and some chopped garlic cloves to it. Place all the contents to a baking dish.

Slide it inside the preheated oven. Change the temperature settings to 200° C.

Let all tomato juice dry up and the tomato crust turn brown. It’s time to take the baking dish out. Now make 4-5 grooves in the tomatoes. Break whole eggs into each groove. Sprinkle some red chili flakes and oregano on it. Cover the dish with a foil and put it back in the oven for 5 more minutes.

Remove the baking dish from the oven. Uncover it. Serve piping hot with some crisp toasts.
