Spinach and Mushroom Risotto


Spinach and mushroom taste so good together, probably, you’d get millions of recipes that use mushrooms and spinach together. What else blend well with them are lots and lots of cheese and cream. Both spinach and mushrooms are quite healthy and good for your health. I have a fantastic recipe to share, which is not only easy to make, but is quite appetizing and scrumptious for you, kids and guests, of course!

Risotto is a rich and creamy Italian dish made with rice. Risotto is usually the first course (served before the main course) in Italy. Its smooth and oozy texture is quite an appetizing sight itself. So let’s begin cooking some risotto and tell your family there’s much more than pizzas and pastas when it comes to cooking Italian at home!

Gather the following-

1 Cup Short-Grained, Round Rice
Mushrooms
Spinach
Processed Cheese
1 Glass Dry White Wine
2 Cups Chicken Broth (you can replace chicken broth with vegetable stock if you are a vegan)
Chopped Onions
Olive Oil
Salt
Freshly Ground Black Pepper
Oregano
2 Cloves of Garlic- Finely Chopped
Butter

Preparation-

Sauté chopped onions in 2 full spoons of olive oil until transparent. Now add sliced mushrooms and chopped spinach.

Remove from heat and keep aside. Now add washed rice to the remaining olive oil and cook until they turn translucent. Pour a glass full of warm white wine. Let it completely evaporate before you pour in the chicken broth (or vegetable stock). Add salt to taste.
Let the rice simmer till the liquid starts to bubble out. When all the broth is almost absorbed by the rice, add some water to balance the consistency you require. When the rice seems to be cooked, add in the sautéed onions, spinach and mushrooms. It’s time to stir in the cheese and sprinkle some oregano and black pepper.
