What we take:
1 Cup Boiled Chicken Pieces
2 Stalks lemongrass
1 cup chicken stock
1 cup boiled rice noodles
½ cup coconut milk
½ cup roughly chopped basil
½ cup diced carrots
Onion greens
2 inch ginger piece, finely chopped
2 tsp soy sauce
1 tsp freshly grounded black pepper
What we do:
1. Boil the noodles as per instructions on the packet. Drain and douse in cold water. Keep aside.
2. Bring the chicken stock to boil. Add all the ingredients except the coconut milk and bring to boil.
3. Once the soup starts boiling, lower the flame and let it simmer for 5 minutes.
4. Now add coconut milk stirring constantly.
5. Take the taste test and adjust salt and seasonings.
