Upma


Disclaimer: I'm not hereby discussing my invention, some rarely heard recipe or anything unusual for you to roll your eyeballs. I’m simply trying to remind you of a cuisine that can be the attraction of our daily breakfast or the evening snacks.

Here's the course of action:
Upma is healthy, tasty and easy dish that you can offer to all age groups without the guilt of serving something unhealthy or what they shouldn't be eating! My father-in-law is a diabetic. It’s that scary? Surely, it'll sound scary to all of you who've ever seen someone suffering from this dreaded disease. He is a halwa fan, so I couldn’t think of anything but salty halva with some freshly chopped vegetables and ensure he's happily having his breakfast and I smile back at him.

Here’s the easiest route to the yummiest Upma:

Quickly grab-Sooji
Ghee
Fresh vegetables like peas, carrot, beans, cauliflower florets, capsicum
Onions
Ginger
Chana dal
Urad dal (stripped and split)
Curry leaves
Mustard seeds
Sambhar masala

Some easy steps to follow-

Roast 1 cup sooji (rava) with 2 tbsps of clarified butter (desi ghee as we usually call it!). Stir constantly to ensure even cooking. Keep stirring on medium flame until the creamy white sooji turns golden brown.
Keep aside. In the separate pan (or same pan in case you don’t have a dishwasher or a maid) add 2 tbsp of ghee or refined oil. Add mustard seeds. Let them crackle. Add the raw dals (1 teaspoon each) and fry them golden. Add curry leaves, whole red chilly (split with the knife). Now add sliced onions. Keep stirring till they turn golden in colour.
You can now add freshly chopped and de-seeded vegetables. Sprinkle some salt and sambhar masala too.
Sauté the vegetables for a minute or two. Now is the right time to add water. Add 3 cups (3 times the amount of sooji) of water and let it boil till the vegetables are done. Add that roasted sooji you had kept aside. Let the mixture simmer until all water dries off. Even after you see no more water floating in the pan, let it cook to give it a little dry consistency.
Transfer it all to a serving bowl. Garnish with some coriander, grated coconut or sliced nuts. You can now call it Rava Upma!
