For times when you have nothing on your mind, but people around you instantly need something interesting to snack with, kill the tomato ketchup monotony and prepare this quick macaroni salad that probably won’t ask for anything that isn’t in your fridge already. It goes well as an accompaniment with grilled chicken, savoury sausage bread, or some picnic-style entrees.
You’ll need:
1 cup curd
2 tbsp fresh cream
3 tbsp milk
2 cups boiled, drained and rinsed macaroni
1 cup finely chopped cucumber
1 tbsp finely chopped coriander
2 tbsp finely chopped celery
1/2 cup finely chopped onions
1/2 cup finely chopped tomatoes (de-seeded)
1/2 cup finely chopped capsicum
salt to taste
Red chili flakes, Paprika or Tabasco
1 tsp Garlic powder or 2 cloves of finely chopped fresh garlic
Quick Process:
Mix all ingredients. Toss them with a spatula or your hands taking care, not to break the boiled macaroni elbows.
Refrigerate for some time to allow the flavours to mingle. Serve with any kind of summer dish or snack. Goes well during meals, drinks and snack time.
