Plain Sponge Cake



All you need:
1 cup wheat flour
1 cup refined flour (Maida)
3 eggs
2 cups sugar
1 tsp vanilla
1 cup milk
2 tsp baking powder
1/4 cup butter
A pinch of salt

So, how do we go about it? 


1. Beat eggs in a mixing bowl until frothy. 

2. Add sugar to the eggs beat for some 5 minutes with hand blender or a fork (or a minute if you’re using an electric blender).  The consistency should be fluffy. Add vanilla essence too and stir.

3. Sift all the dry ingredients in another bowl.  Make sure baking powder is well mixed in the flour! Now add the egg and sugar mixture to the dry ingredients and mix well.
4. Melt the butter in a saucepan or keep a small bowl with butter in the microwave for half a minute.
5.  Add melted butter and warm milk to the batter. Beat well, ensuring a smooth consistency.
5. Grease a baking dish well with oil or butter and then sprinkle some flour on it. Pour the batter into the baking dish now.

6. A crucial step- Bake at 200
° C for 30 minutes. Insert a toothpick when done. If the toothpick comes out clean, the cake is ready. If you allow standing time for 10 minutes, you can easily remove the cake from the baking dish and shift it to the serving dish.  (usually, a well baked cake tends to shrink by a few millimetres on cooling!).
